This will make quite a good amount of filling so if you find yourself with leftovers you can freeze them for another time, or top them with mashed potatoes and bake in a pie dish, or simply make half the recipe.<br /><br />2 tbsp sunflower or rapeseed oil<br />1 lb stewing beef, finely chopped<br />2 onions or 4-5 shallots, finely chopped<br />2 tsp thyme leaves<br />2 tbsp plain flour<br />1 glass red wine (omit and replace with more stock if preferred)<br />1 glass beef or chicken stock<br />Salt and freshly ground black pepper<br /><br />To make a beef and onion filling, season the chopped beef well. Heat the oil in a frying pan over a medium-high heat, add all the meat and brown well all over. Add the onion and allow to soften. Add the thyme leaves, then sieve over the flour and stir well so it coats the meat. Add the wine and stock, stir well, then bring to a simmer. Cover and simmer very gently for 1-2 hours until the meat is completely tender and the sauce is nicely gloopy. Check the seasoning.
